Ondeh Ondeh Swiss Roll Cake

So, it was one of those days where you are so in the mood of baking. I am sure we all have that moment right? And of course, we also know that once the mood kick in, nothing can stop us. Surf online and you can find endless recipes on doing swiss rolls with many variants.  I do not like to do "difficult task" and I decided to tweak several recipes here and there and this is my end result. Cant complain and I am pretty pleased with it.  

My simple recipe is such:

*3 large eggs
*75gm sugar
whisked the items marked * egg first until fluffy, then add the sugar bit by bit

100gm plain flour
50gm  coconut milk
1 tablespoon cornflour
1 tablespoon oil(canola will do)
1/4 teaspoon pandan paste 
(or pandan juice, if you use pandan juice mix it with the 50gm coconut milk )

Add all the second ingredients to the whisked items slowly and mix well.


Preheat the oven to 175deg and place parchment paper on the tray. Brush a little oil and pour the batter. Bang bang the tray so that no bubbles are trap. Then pop in the oven for a good 20-30 minutes. Depending on your oven ok?  Once ready, let it cool and I don't roll mine like every recipe said and it still do not crack (thank goodness!). I am guessing the oil in it that do the magic. But what do I know?

Once cool, spread the filling and sprinkle the coconut flakes on it and roll slowly like a lady... And then, Slice it if you cannot wait! I cling wrap my master piece because I brought it to my language class and the 1st thing my teacher said was, It is green.... Oh well...Not everyone knows what is Pandan leaves and the magic...

Filling:
I like mine to be butter cream so here goes
150gm softened butter
milked or cream just to mix it with butter so that it is creamy
whisk both together till you reach the right consistency
Some toasted coconut flakes to sprinkle on the filling
